Gin & Brunch - Our 2 favourite things!

If you're anything like us, two of our most favourite things are sipping on gin cocktails at a beautiful brunch 11am on Saturday with our girls. Now, we are bringing those two things together to help you be the ultimate hostess and have your very own gin brunch! Hosting the next girls weekend? Have a hen weekend away and you're on breakfast duty? Don't worry we have you covered!


1. Grapefruit Gin Brunch Cocktail

First up! Welcome drinks and not everyone will want the usual Bellini or Mimosa, so why not change things up with this easy to this simple citrus gin cocktail!


Ingredients

  • 1 inch piece grapefruit peel

  • 1 teaspoon honey

  • 2 ounces fresh grapefruit juice

  • 1 1/2 ounces gin

  • 1/2 ounce fresh lime juice

  • 4 ounces tonic water


How to Make

In a cocktail shaker, add the grapefruit peel and the honey. Add a handful of ice cubes, the grapefruit juice, gin and lime juice. Shake it up. Fill a tall glass halfway with ice cubes. Add a wedge of grapefruit and lime. Pour contents of shaker into glass. Top off with tonic water. Extra tip: put one of our rose gold straws in the freezer; this keeps the drink extra cold for longer!


2. DIY Garnish Bar

Now you've made the first round of cocktails as a welcome, set up a small DIY station for the girls to garnish how they'd like and to make their own after. This means that you can crack on with whipping up pancakes and an easy way to keep being a fabulous host without trying to be in 2 places at once.

Garnish wise....we love fruit, hibiscus flowers, mint or basil leaves. Pop more gin out with some lemonade and tonic and so they can mix and match!





3. Gin Pancakes (Gin optional!)

Okay, so maybe you don't want EVERY thing gin themed, we get it! So with or without the Gin these american style fluffy pancakes will be a winner with everyone.

We've tried a lot of pancakes and this is recipe by BBC Good Food is definitely our favourite. The recipe makes 10 pancakes; even better? It's only 5 mins prep time and 10 mins cooking time!


For the syrup

250ml can gin & tonic

2 tbsp caster sugar

1 lemon, juiced (and zest for garnish)


For the pancakes

200g self-raising flour

1 egg

2 tbsp caster sugar

250ml can gin & tonic

oil for frying



Method


To make the syrup

Pour a can of gin & tonic int the saucepan along with the sugar and lemon juice and reduce for a few mins until syrupy. Set aside.

To make the pancakes

Put the flour, egg, sugar and a pinch of salt into a bowl, pour in the other can of gin & tonic and whisk the batter until smooth. Lightly oil a non-stick pan, set over a medium heat, add two spoonfuls of batter into the pan and cook for 1-2 mins on each side. Repeat with remaining batter. Serve with the syrup drizzled over and finely grate over some lemon zest. We like adding a little fresh fruit to serve!

Now, this is where Pinterest seriously comes into it's own. Our tip; colour co-ordination is everything, Etsy & Amazon are the easiest and usually cheapest places to source and don't get carried away with too much - you'll end up with too many things to do, too much expense and it will start to get a little cluttered! 5. Add something a little special - Grazing Boards

We know that you can't just serve G&T pancakes... no matter how delicious they are! We recommend a grazing serving board. Why? Simple and easy to put together, it means people can serve themselves, they look amaz-ing and if you're having a girls day at home you can graze throughout the day whilst making more of those Gin Cocktails!
